Cheese and Leek Jacket Potatoes
Ingredients
- 2 medium baking potatoes e.g. Estima or Marfona, scrubbed
- 1 tbsp olive oil
- 200g leeks, sliced
- 2 tbsp mayonnaise
- Salt and pepper
- Dash Worcestershire sauce
- 50g cheddar cheese, grated
Directions
- Scrub the potatoes and place in a pre-heated King Edward oven at approx 200°C.
- Cook for approximately 1 hour until thoroughly cooked.
- After the potatoes have been cooking for approx 45-50 minutes prepare the fillings. Heat the oil in a frying pan and fry the leeks for 3-4 minutes.
- Cut the potatoes in half lengthways, scoop out most of the flesh and mix with the leeks, mayonnaise, seasoning and Worcestershire sauce. Place back in the potato jackets.
- Top with cheese and place under a preheated grill for 3-4 minutes or back in the oven for a further 5 minutes, until melted and lightly golden.
- Those potatoes not served can be transferred to the top display/storage area to stay hot until you are ready to serve them.
- Always use insulated oven gloves when handling hot potatoes and opening/closing the oven door.
